Spice Mixology 101: Lemon Oregano Marinade

Tonight is Dining Room Date Night. Every week {or so} my hubby and I designate an evening when our kids eat early and then watch a movie while he and I have a grown up dinner…with grown up food…and grown up conversation. It is an evening that excites all of us so we keep on making it happen!

Anywho, the main course for Dining Room Date Night this evening is lemon oregano chicken. I used spice mixology techniques for the preparations. Here is how it went.

step one: select spice mix


step two: choose flavor profile

Greek Flavor Profile

step three: combine and stir spices

Dump the following ingredients in a smallish bowl. These items are all listed in the Greek Flavor Profile table.

juice of 2 lemons

zest from 1 lemon

salt {to taste}

black pepper {to taste}

2 garlic cloves, minced

dried oregano, about a teaspoon

olive oil, about 2 tablespoons

fresh flat leaf parsley, chopped {just grab a handful of leaves and chop}

Stir contents in bowl to combine. This was enough marinade for eight chicken thighs.

Step four: apply mix to protein

Spoon marinade over chicken thighs. Cover and marinate in the refrigerator for a couple hours. If desired, flip meat halfway through marinating time.

step five: cook

Grill. Definitely. Grill until meat reaches 165° Fahrenheit {75° Celsius}.
